One of my most popular recipes is for a low carb breakfast cookie. I made it a long time ago for my hubby who was trying to cut out his morning bagel. I needed to make a keto breakfast without eggs because he is not a fan of that food.

So I came up with these meat lover’s keto high protein biscuits for him instead. Originally I called these savory breakfast cookies but the texture is more of a biscuit. I have a veggie version too!

I loaded these keto biscuits up with bacon, ham, sausage and cheese and made a big batch so I could freeze them for a breakfast on a go. Each biscuit is high protein (7.6g) and low carb (0.5g) so they are a great way to start your mornings.

And they are gluten free and very easy to make. So if you are on a keto or low carb diet I think you will love these meaty, cheesy protein breakfast biscuits. It’s keto comfort food and great for low carb meal planning!

Recipe ingredients I used and substitution.

The simple ingredients I used for this recipe is almond flour, eggs and baking powder. The add ins are breakfast sausage, bacon, ham and cheddar cheese.

Almond Flour
I like almond flour instead of coconut flour because coconut flour has a bit of sweet taste. Also with coconut flour you have to use much less of than almond flour and in this recipe you need the bulkiness of the flour to make the biscuit.

So I would just use almond flour or if you don’t care about carbs or being gluten free you can use regular flour. Also almond meal would work too.

Breakfast Meats
I used breakfast sausage that comes in a roll like Bob Evans or Jimmy Dean. You could probably use link sausage but you should chop it up and that can be hard with casings. I also used bacon and ham. You can use any combination of these or just one of them. But make sure the final proportions add up to about 6 ounces.

Cheddar Cheese
I think cheddar cheese goes best with the other ingredients however you can easily use other kinds of cheese like Monterey Jack, pepper jack, Colby, Swiss cheese, whatever but you want it to add some flavor and help keep everything together.

How to make meat lovers keto high protein biscuits.

Step 1: Preheat oven to 375°F. Cover a cookie sheet with a piece of parchment paper or a silicone mat. Set that aside.

Step 2: If you sausage is not cooked, get out a skillet and brown the sausage. Make sure to break it up into little pieces as it browns. When done, set aside to cool. Also cook your bacon if it is not cooked and crumble when it’s done. Chop the ham into small pieces too.

Step 3: Get out a mixing bowl and add the almond flour and baking powder.

Step 4: In another bowl, beat the eggs and mix in half of the cheeses. Then add the dry ingredients to the wet ingredients and mix to combine. Lastly fold in the cooked sausage, chopped ham and bacon.

Step 5: Get out the prepared baking sheet and add spoonfulls of the biscuit dough. Note they will not spread much at all. Top them with the rest of the shredded cheese. This recipe made 13 high protein biscuits for me.

Step 6: Place the cookie sheet in the preheated oven and bake for Bake 8-10 minutes. Check them at 8 minutes and keep in mind that you don’t want them too brown or they will dry out. Below is what they should look like. Let them cool before eating.

Take them out when the cheese have melted, they are golden brown and are cooked through. Let cool before serving. Note these should have more of a chewy texture when they cool and not a crumbly texture.

How to freeze these protein breakfast biscuits.

You want to let the biscuits cool completely before freezing. Then you can add them a sealed container or baggie and freeze for a few months. They will also keep in the refrigerator for a few days.

To reheat them from frozen, microwave them for 30-60 seconds. They will get soft but once they cool down the end product will be as good as fresh baked.

Ingredients

  • 4 ounces pork breakfast sausage, cooked and crumbled
  • 2 ounces ham, diced
  • 2 pieces bacon, cooked and crumbled
  • 3 eggs
  • 4 ounces cheddar cheese, shredded
  • ¾ cup almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 375°F. Cover a baking sheet with parchment paper or a silicone mat and set aside.
  2. In a large bowl, beat eggs and add in half of the cheddar cheese.
  3. In a separate bowl mix the dry ingredients - almond flour, salt and baking powder.
  4. Add the dry mixture to the egg mixture and stir to combine. The fold in the sausage, bacon and ham.
  5. Mix to make a sticky dough. Then place big spoonfuls of the dough evenly on the prepared baking sheet. This recipe made 13 biscuits for me.
  6. Top each cookie with the rest of the cheddar cheese. Bake for 8-10 minutes until golden brown and cooked through.
  7. Let cool before eating. To freeze leftover biscuits, let cool completely then store in an airtight container or baggie and place in the freezer. To reheat place in microwave and cook for 30 - 60 seconds and let cool a bit before eating.
